Chicken & Goat Cheese

A customer favorite, our Chicken & Goat Cheese Pasta is prepared with goat cheese, marsala wine, fresh rosemary and black cracked pepper. We love to pair it with a glass of our Honig Sauvignon Blanc, whose perfectly balanced notes of citrus and stonefruit pair perfectly with this pasta’s creamy cheese. Ingredients

  • 8 oz DeCecco fusilli pasta, uncooked
  • 2 Tbl extra virgin olive oil
  • 2 Tbl garlic, minced
  • 2 tsp kosher salt
  • ¼ tsp cracked black pepper
  • 1 Tbl fresh rosemary, chopped
  • 8 oz chicken breast (raw), cubed
  • ½ cup marsala wine
  • 2 cups heavy cream
  • 2 oz grated parmesan
  • 3 oz goat cheese crumbles

Garnish:

  • 1 pinch parsley, chopped
  • 1 oz goat cheese crumbles
  • 1 pinch cracked black pepper
  • 1 rosemary sprig
  1. Cook the pasta in boiling water for approx 5 minutes or until al dente, then drain
  2. In a pot, combine the oil, garlic, salt and pepper. Cook until the garlic is golden brown
  3. Mix the chopped rosemary and chicken together and add to the pot. Cook until it has a nice sear
  4. Deglaze the pot with marsala wine and reduce the liquid by half
  5. Add the heavy cream and bring to a low boil
  6. Add the cooked pasta to the pot, then the grated parmesan and goat cheese
  7. Mix until incorporated and reduce to a simmer
  8. Allow the pasta and sauce to continue to simmer until the sauce thickens
  9. Top with parsley, goat cheese crumbles, pepper and a rosemary sprig
  10. Enjoy!
