Spaghetti & Meatballs

One pasta dish that never goes out of style is Spaghetti & Meatballs; and ours is no exception. Prepared with an Italian san marzano tomato marinara, extra virgin olive oil and hand-rolled meatballs; we love to drink it with a glass of our Trebbio Chianti. , Spaghetti & Meatballs

Ingredients

  • 8 oz of DeCecco spaghetti pasta, uncooked
  • 2 Tbl extra virgin olive oil
  • 1 Tbl minced garlic
  • 1 can (14 oz) of Carmelina tomatoes
  • 1 tsp granulated sugar
  • 1 tsp kosher salt
  • 1 Tbl basil, julienne

Garnish:

  • 1 tsp parsley, chopped
  • 1 tsp grated parmesan
  1. Cook the pasta in boiling water for approx 5 minutes or until al dente, then drain
  2. In a pot, heat the olive oil and garlic. Cook until the garlic is golden brown
  3. Add the tomatoes, sugar, salt and basil and bring to a boil
  4. Let the sauce simmer for 5 minutes and adjust the seasoning if needed
  5. Add the drained pasta to the sauce and toss until it is fully coated
  6. Plate the pasta in a bowl and top with grated parmesan and parsley
  7. Pair with your favorite meatballs (recipe below)
  8. Enjoy!

Meatball Ingredients

  • 2 oz butter, unsalted, melted
  • 2 Tbl garlic, minced
  • 2 tsp kosher salt
  • 1 tsp cracked black pepper
  • 1 lb, 4 oz ground beef
  • 1 ea whole eggs
  • ¾ cup panko breadcrumbs
  • ½ cup grated parmesan
  • 2 Tbl parsley, chopped
  1. In a small pot, melt the butter and then add the garlic, salt and pepper. Lightly sweat the garlic then set the mixture aside and allow it to cool.
  2. In a mixing bowl, combine the ground beef and eggs
  3. Pour the cooled butter mixture into the bowl and mix by hand until fully incorporated
  4. In a separate mixing bowl, combine the panko breadcrumbs, grated parmesan and parsley. Add the ingredients to the ground beef mixture and mix by hand until fully incorporated. *Do not over mix*
  5. Use a scoop to portion out the meatballs, approx 2 oz each
  6. Hand-roll the meatballs and place them on a tray
  7. Bake in a 400-degree oven for approx 10-15 minutes or until they reach an internal temperature of 165 degrees
  8. Enjoy!
